Menu Plan Monday - Happy Valentine's Day

Good morning!!
We had a pretty uneventful week last week. The big kiddos went back to school (YAY!) The little and I got back into our routine. All is right in the world again. Except there is more snow planned for this week... :(  At least it won't be as bad as the last storm!

This week is looking to be just as uneventful. Except there's Valentine's Day this weekend! I am still undecided about how I feel about this holiday. I used to hate it. I think it is growing on me, but my husband chooses to spoil me plenty of other days throughout the year, so this day is sometimes just another day around here. Last year, we got to spend the weekend in the mountains with some friends. It was a lot of fun. This year, I have some special dinners planned for Saturday AND Sunday!  I wanted one thing, and the Mr. wanted something else, so we're having both! Bonus - both are super easy to adjust depending on how many people you want to share with! Read on... ;)


Leftovers


Brisket nachos

We ended up having a brisket for Sunday dinner instead of the chili cornbread skillet, so that got bumped to this week. (In case you don't know, my husband makes an amazing one!!) We have lots leftover, so I decided to make these Cowboy nachos from the Pioneer Woman!

Ingredients: Tortilla chips, leftover brisket, pinto beans, cheddar cheese, pico de gallo, avocado, sour cream


Chicken pot pie

Ingredients: Chicken, mixed veggies, cream of chicken, milk, pie crusts, mozzarella

Chili Cornbread skillet (For real this time!)

Ingredients: Ground beef, chili beans, kidney beans, diced tomatoes, cornbread mix, cheddar

Greek pizza

Ingredients: Pizza dough, Spinach, mozzarella, feta, grape tomatoes

Steak, roasted potatoes, green beans

Ingredients: Steak of your choice. (I chose a Porterhouse for the Mr., and  a NY Strip for myself), potatoes, green beans


She crab soup, homemade bread
