Chicken and Wild Rice One Pot Dish
1.5lb. cooked, cubed chicken
2 Cups uncooked Wild rice
1 cup chopped carrots
1 cup chopped celery
1 small onion, diced
1 can cream of chicken (or mushroom if you prefer)
1 Tablespoon butter
Salt & Pepper
Melt butter in large saucepan. Add vegetables and season with salt & pepper. Sautee. Add cooked chicken, wild rice, water (according to rice directions), cream of chicken, plus one can of water. Bring to boil. Stir. Cover. Lower heat and simmer until rice is soft, about 15 minutes. Remove from heat and let stand 5-10 minutes before serving. Enjoy! Super easy and delicious!
Vegetable Medley (this came from a friend. It is SO good!!)
1 bag (16oz. frozen broccoli, carrots, cauliflower, thawed and drained
1 can (10 3/4oz.) cream of mushroom soup
2 Cups (8oz) Shredded swiss cheese
1/3 Cup sour cream
1/4 tsp black pepper
2.8oz French Fried Onions
Mix 1/2 cheese, 1/2 onions, and other remaining ingredients. Put in rectangle baking dish. Bake at 350 for 30-35 minutes. Top with remaining cheese and onions. Bake in oven 5-10 minutes, until cheese is melted.
Mexican Crock Pot Chicken
I found the original Recipe on Pinterest. I can't find the original link., but all it called for was
1 package of chicken
1 can corn, undrained
1 can black beans, undrained
1 package cream cheese
1 can Rotel
I found this recipe great, but a little boring. I spiced it up by adding:
1 can green chilies
1 small can sliced olives
1 Tablespoon Tupperware Southwest Chipotle Seasoning
Cook in Crockpot on low for 7-8 hours. We shred the chicken and serve over tortilla chips!
