Menu Plan Monday - Happy February!

Welcome back for another week!
Last week was an unexpected crazy. The schools were closed for administrative work days Monday and Tuesday, but due to the snow, they were rescheduled for Wednesday and Thursday...Two more days of "vacation." Okay, I can deal. Back to school Friday. Nope...We got a call Thursday evening that the roads and sidewalks were still not safe enough for the kids that had to walk, or for the buses. No school again Friday. I thought I might cry. Melting snow is not as much fun to play in, so most of the week was spent inside. Our normal weekly outings were also cancelled, and a lot of places were still closed earlier in the week. So there was nothing. To. Do. Except stay inside. And drive me bonkers! We all survived, though, and it is (finally!) back to school today.

Amidst all the chaos of last week, I didn't get to post my little dining room makeover for the 14 week challenge, so be on the lookout for that this week! (Maybe tomorrow) I'm really excited about it.

We also had to reschedule our birthday party that was planned, so it was this past Saturday. We had 16 (!) kids here total, including the little babies. It was a lot of fun. Everyone got to paint their own little masterpiece. K had a great time playing with all of his friends. I will be doing a full post on this soon!

Now on to the good stuff....

We actually ended up ordering Chinese food last night, so we will be having Steak Chili and cornbread that was planned for Sunday's dinner :)
Chicken & Black bean tostadas

Ingredient list: corn tortillas, ground beef, black beans, lettuce, tomato, salsa, cheese, sour cream
One Dish Garlic and Herb Roasted Pork Tenderloin with Carrots & Red Potatoes

Ingredient list: Pork tenderloin, Garlic, Rosemary, Thyme, Carrots, Red Potatoes, Onion

Ingredient list: honey, lemons, olive oil, apple cider vinegar, lemon pepper seasoning, chicken, angel hair pasta
Greek Pizza (we ended up not having this last week, so it is rescheduled for this week!)

Ingredient list: Pizza dough or crust, Spinach, garlic, Feta Cheese, Mozzarella Cheese, Grape tomatoes

I'm trying a new recipe this time!

Ingredient list: Russet Potatoes, Cream Cheese, Garlic, Onion, Chicken Stock, Bacon

Sounds almost identical to Monday's meal, doesn't it? :( I obviously wasn't thinking about this when I planned...Thankfully they are just different enough that I am going to keep it on the menu!

Ingredient list: Ground beef, diced tomatoes, chili beans, kidney beans, corn, tomato sauce, cornbread mix, cheddar

 Now, I need to go work on getting breakfast for those hungry kiddos that are going back to school TODAY!!!
