Menu Plan Monday - Happy Valentine's Day

Good morning!!
We had a pretty uneventful week last week. The big kiddos went back to school (YAY!) The little and I got back into our routine. All is right in the world again. Except there is more snow planned for this week... :(  At least it won't be as bad as the last storm!

This week is looking to be just as uneventful. Except there's Valentine's Day this weekend! I am still undecided about how I feel about this holiday. I used to hate it. I think it is growing on me, but my husband chooses to spoil me plenty of other days throughout the year, so this day is sometimes just another day around here. Last year, we got to spend the weekend in the mountains with some friends. It was a lot of fun. This year, I have some special dinners planned for Saturday AND Sunday!  I wanted one thing, and the Mr. wanted something else, so we're having both! Bonus - both are super easy to adjust depending on how many people you want to share with! Read on... ;)

Leftovers

Brisket nachos

We ended up having a brisket for Sunday dinner instead of the chili cornbread skillet, so that got bumped to this week. (In case you don't know, my husband makes an amazing one!!) We have lots leftover, so I decided to make these Cowboy nachos from the Pioneer Woman!

Ingredients: Tortilla chips, leftover brisket, pinto beans, cheddar cheese, pico de gallo, avocado, sour cream

Chicken pot pie

Ingredients: Chicken, mixed veggies, cream of chicken, milk, pie crusts, mozzarella

Chili Cornbread skillet (For real this time!)

Ingredients: Ground beef, chili beans, kidney beans, diced tomatoes, cornbread mix, cheddar

Greek pizza

Ingredients: Pizza dough, Spinach, mozzarella, feta, grape tomatoes

Steak, roasted potatoes, green beans

Ingredients: Steak of your choice. (I chose a Porterhouse for the Mr., and  a NY Strip for myself), potatoes, green beans

She crab soup, homemade bread

Day one of playing catch up...

My Valentine

       In case you didn't notice, we are a military family. My husband has never been home for Valentine's Day of my birthday since we met. This year, he had duty again on Valentine's Day. (He gets to be home for my birthday this year, which is especially awesome since I will be 30!!)  He was scheduled to come home Friday morning (the day after V-Day), but we go to a homeschool co-op on Fridays. I wasn't expecting to see him until about 2:00. I was in the middle of telling my photography class about the photo assignment we were going to be doing, when they all got a strange look on their face as they were looking out the door. THEN- in walks my husband with a dozen roses and a giant card! To top it all off, he was in full. dress. uniform! ♥♥♥ He had inspection that morning and came straight there after. Needless to say, my face was as red as the flowers in my hands. And, of course, my whole class had their cameras out and ready to go for our assignment!

The flowers were so pretty all wrapped up!

I couldn't let him leave without getting a photo first!! I don't get to see this uniform often! I love it!

Banana Bread

     I have a very bad habit of buying a big bunch of bananas and letting them go bad. I don't know why. I love bananas. Every time I buy them I tell myself that THIS will be the time that they all get eaten....yeah right...
     The plus side to this is that we always get to have some banana bread. I love banana bread even more than bananas. Maybe I subconsciously leave just enough bananas to go bad for this reason??? Hmmmm. Something to think about!
     This time, Jacob asked if he could make it by himself. Who am I to say no to this?? I gave him the recipe and helped gather the supplies he couldn't reach, and let him have at it! I had tons of fun taking his picture! I have to say he did a pretty darn good job! It was so good that it was gone by the end of the day! I am very proud to say that it was not me {this time} who ate it all!!

I can't wait to let bananas go bad again so we can have more! As soon as I can find the recipe I used, I will post it!!: )

Happy Valentine's Day

Well, almost!
Last week, for our Art time, we decided to make Valentines crafts. Kyle even got to join in the fun. He finger-painted a canvas that I taped the word "LOVE" on. Would you believe he had 6 different colors to choose from? Once he realized how much fun he could have getting his hands in the paint, he went all out! All the colors got to be best friends! At least they blended together nicely!
Jacob helped me choose papers and cut out letters and shapes on the Cricut. We also made a flower pot thing that we found on Pinterest. I can't seem to find the link now. If I ever find it again, I will be sure to link back to the original poster! If you happen to come across it, let me know so I can add it!! :) Jacob had a lot of fun being creative and painting the papers for the heart flowers. Since we only made one to fit on an 8x10 paper, we had some painted paper left over. We did not want to waste it, so we framed it! I especially love the striped one Jacob did! We added a little white heart to give it some contrast. It is sitting on the entertainment center now. I love looking at it every day!
I have to get to the store and get more canvases so we can make more crafts for the month of March!! I love being able to craft with my kids! I am so glad they enjoy it, too!! :)
