Happy Monday!
I hope everyone is enjoying their New Year so far! Ours has been awesome. A little busy, but that's how I like it! This week, we have Scouts, Lego club, Toddler Story/Music time, MOPS, Co-op, and we get to finish with a birthday celebration!!
At least I have my menu all planned for the week!
Here is the list of what we are having:
Monday- Ravioli
Tuesday- Herb roasted pork tenderloin with cornmeal cakes
Wednesday- Cheesy Chicken Casserole
Thursday- Tacos and cilantro lime rice
Friday- Pizza
Saturday- We have a birthday in the house, so we will be doing a special dinner tonight! :D
Sunday- Jambalaya
For lunch this week, our options are :chili and cornbread, sandwiches, leftovers, and mac & cheese
Breakfast options are smoothies, oatmeal, cereal, omelets, eggs, bacon, toast
What are you making?? I would love something new for taco night!

Learning on Vacation!
During our visit home for Thanksgiving, we decided we wouldn't worry about school work. Jacob left all of his books at home, and thought he would be learning about anything new for two whole weeks! Boy was he wrong! There was so much learning in disguise!
First up was building a bridge to cross over the ditch to the golf course for a play on the 9th hole with dad and grandpa. Jacob was very proud of himself for helping with this bridge! He even told me how he put all the mud in between the logs to help secure it, just like we learned about!
We also went to an awesome little museum in New Bern! This was such an educational experience! We learned how the newspapers were written, how many people it takes to man a ship, and how turpentine was made back in the day! We were all exhausted at the end of the day! It was so much work! We also learned that tree rings don't only tell how old a tree is. They also tell about climate changes during the life of the tree!
Who knew vacation could be so educational? ;)

Menu Plan Monday 01/07/13
It's back again already!
This is the first full week of January! We are getting back into the swing of things...school, dinners, scouts, and everything in between. I am so glad I already have my menu planned out for the month!
Our easy menu this week:
Monday: Spaghetti, homemade bread, salad
Tuesday: Sloppy joes and fries
Wednesday: Quesadillas and cilantro rice ( I got the rice recipe form a friend and it is SO good!)
Thursday: Italian Chicken and veggies
Friday: Steakhouse pizza
Saturday: Stir fry and Pho (I am so looking forward to this dinner! I can't wait to cook it all up!)
Sunday: Chili in the crockpot and jalapeno cornbread
Our breakfasts will include smoothies, omelets, homemade oatmeal, and breakfast potatoes
Lunches are usually leftovers, sandwiches or mac & Cheese
